Gong Fu Tea Brewing Steps

Rinse:

Place the dry leaves into the warmed Gaiwan cleaned by hot water

Pour hot water over the leaves until that are fully submerged
-
Put the lid on and pour the water our completely into your tea tray or bowl
-
This "awakens" the compressed leaves, cleans them, and prepares them for brewing

Brew:
-
Pour hot water​ directly over the leaves ​

Put the lid on, steep briefly

​Hold the Gaiwan with the lid securely in place and pour the tea quickly and completely into the fairness cup through a strainer
-
Steeping schedule:
-
Infusions 1-3: 3 seconds​

Infusions 4-6: 5 seconds
-
Infusions 7-8: 10-15 seconds
-
Notes: Pour each steep out completely to avoid letting leaves soak in the water. The goal is to extract flavor without releasing bitterness.
Raw Pu-er Tea
Tea to water ratio is 1:15
Water temperature: 212 °F
Brewing Devices: a 100 - 120 ml Gaiwan
Recommendation:

Use a 100 ml Gaiwan with 6 grams of tea

Medium Roast Oolong Tea
Tea to water ratio is 1:15
Water temperature: 212 °F
Brewing Devices: a 120 ml Gaiwan or a 150 ml teapot
Recommendation:

Use a 120 ml Gaiwan with 8 grams of tea

Yunnan Wild Tree and Ancient Tree Black Tea
Tea to water ratio is 1:30 - 1:50
Water temperature: 212 °F
Brewing Devices: a 500 ml teapot
Recommendation:

Use a 500 ml teapot with 10 - 16 grams of tea
Yunnan Mangfei White Tea
Tea to water ratio is 1:20 - 1:30
Water temperature: 185 °F
Brewing Devices: a 140 ml Gaiwan or a 500ml teapot
