Tea Brewing Guide

Gong Fu Tea Brewing Steps

Essential gear

  • Fairness cup

  • Strainer

  • Small cups

  • Electric kettle with temperature control

Rinse:

  • Place the dry leaves into the warmed Gaiwan cleaned by hot water

  • Pour hot water over the leaves until that are fully submerged

  • Put the lid on and pour the water our completely into your tea tray or bowl

  • This "awakens" the compressed leaves, cleans them, and prepares them for brewing

Brew:

  • Pour hot water directly over the leaves

  • Put the lid on, steep briefly

  • Hold the Gaiwan with the lid securely in place and pour the tea quickly and completely into the fairness cup through a strainer

  • Steeping schedule:

    • Infusions 1-3: 3 seconds

    • Infusions 4-6: 5 seconds

    • Infusions 7-8: 10-15 seconds

Notes: Pour each steep out completely to avoid letting leaves soak in the water. The goal is to extract flavor without releasing bitterness.
